Food Art ~ Blondies

Aisha shares one more recepie from her treasures... Check out her pics on flickr and let me know if you'd like to see more... *smiles*

Blondies (White Chocolate Brownies)

Ingredients:
1 cup butter, softened
1 cup soft brown sugar, packed
1 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons vanilla extract
3 cups plain flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup white chocolate chips

Directions:

- You will need a 9x13inch baking tin, buttered and lined with parchment paper.
- Preheat the oven to 180ÂșC/350°F/gas mark 4.

1) Add butter, brown sugar and white sugar in a large bowl and beat until it is smooth and fluffy, about 2 minutes.
2) Stir in the eggs, one at a time, and vanilla and beat again till you get a smooth, satiny mixture.
3) Sift flour, baking powder and salt in the egg mixture and mix with a big spoon until well combined. (the dough is more like cookie dough rather than regular brownie mixture)
4) Stir in the white chocolate chips.
5) Spread the dough into the prepared tin and bake on the middle shelf of the oven for 25- 30 minutes. (no more than 30 minutes)
6) Remove from the oven and let it cool in the tin before taking it out and cutting to pieces.

  3. Oh, thanks ALL!

@Purvi: Here's a recent thread discussing about good substitutes for eggs. Hope you will find something suitable to meet your requirements:

  4. We don't get egg substitutes in India. I know certain cake recipes without eggs, collected from the net, but how to modify recipes with eggs I will not know, nor would I like to take the chance.
SO you only have to help us in this matter.
Any way your white chocolate brownies look really very tempting.

  5. @Rama, I WAS trying to help with the link posted above. When I say egg substitutes I'm not talking about the commercial Egg Replacer. Mashed banana (half a banana per egg) and applesauce are the popular choices.

    Here's another link:
